Panamanian style Arroz con Pollo (Rice with Chicken).
Description:
Arroz con Pollo (Chicken with Rice) is
a delicious dish and one of the most popular among the Hispanic community. As
growing up in a Panamanian household, watching my mother preparing many
delicious dishes, one of my favorite that is quick and easy to prepare is the arroz
con pollo which today I will share with you. Note that everyone has their own
way of preparation.
Ingredients:
- 2
chicken breasts
- 4
cups of rice
- water
- 1
can of mix vegetables
- 4
cloves of garlic (Chopped)
- ½
onion
- ½
Tbsp. oregano
- Salt
and pepper to taste
- 1
bunch of cilantros (chopped)
- ½
bottle of capers
- 1
bottle of green olive
- Olive
oils
- 4
packets of sazon Goya with saffron or Rika caldo de pollo.
- 2
packs of powdered chicken bouillon
- 1
Tbsp. Goya adobo.
Directions:
1- In a
large Pot, add the cleaned chicken breast, add water until it covers the
chicken, add 2 packs of sazon Goya, add garlic cloves, oregano, some of the
chopped onion, and chopped cilantro. Stir and let it cook medium high until
chicken is tender. (Keep the remaining chicken broth).
2- Remove
chicken, let it cool, and shred it.
3- Heat some
oil on a shallow heavy bottom pot at low temperature
4- Then add chopped garlic cloves, chopped onions,
chopped cilantro, shredded chicken, green olive without the liquid, ½ of bottle
of capers, 4 cups of rice, mixed vegetables, 5 cups of the remaining chicken broth, 2 packs
of sazon Goya, 2 packs of powdered chicken flavored bouillon, and 1 tbsp. of
Goya adobo. Stir and let it cook.
5- Cook on
medium high until liquid is absorbed
6- After
liquid is absorbed lower to medium low heat. Stir in the rice, and then cover tightly and
steam for about 20 minutes or until rice is completely cooked.
7- Serve and enjoy!!
